2019 Cabernet Sauvignon

The 2019 growing season turned out to be quite balanced. We had started the vintage off with early, warmer temps in the spring which slowly normalized themselves as summer came around giving us a longer, more gradual growing season. 2019 really gave us the opportunity to work closely with our vineyard managers as we honed in on dropping yields, gaining full phenolic development and obtaining plush, ripe flavors. September surprised us with much warmer temps during the day and those cooler breezes at night as Cabernet Sauvignon loves to thrive in so well. This gave the skins a chance to maintain its firmness towards our pick.

Winemakers Notes
The 2019 Cabernet offers notes of black cherry, currants, cinnamon and rose petals with subtle notes of French vanilla and milk chocolate. The tannins are ultra-polished while rich and voluptuous dark fruits carry this Cabernet across the palate. This cuvee of Red Mountain and Horse Heaven bond seamlessly as it finishes with notes of wild mountain flowers, cocoa and dried fig fruit.

Composition – 33% Shaw Vineyard, 33% Quintessence Vineyard, and 34% Discovery Vineyard.
